The UNESCO Nomination

The cultural traditions linked to stockfish, on their way to recognition as intangible cultural heritage of humanity.

Baccalà mantecato (Venice's whipped stockfish cream) is more than a recipe: it is the landing point of a trade and cultural route that has linked the Lofoten islands to Venice since 1432. Since 2023 stockfish traditions have been candidates for the UNESCO Representative List of the Intangible Cultural Heritage of Humanity. Norway is the lead country, Italy supports the candidacy, and Iceland and Nigeria are taking part as well. The Dogale Confraternita helps build the community behind the candidacy and brings the contribution of Venice to it.

This page sums up the nomination project shared by the Confraternita. The international dossier is with the competent authorities and is not a public document yet: official materials will be published here as they become available.

The milestones

  1. 2023

At the Bergen Food Festival stockfish becomes a bridge between Norway and Venice: the idea of a shared nomination takes shape.

  2. 2025

At SAOR 2025 the Dogale Confraternita brings baccalà mantecato to the centre of the public debate on the nomination.

  3. 2026

On 5 June the dossier for the UNESCO nomination of the cultural traditions linked to stockfish is submitted.

  4. 2027

By 30 March the nomination has to reach the UNESCO Secretariat in Paris. That is the goal the project has set itself.

The national steps

The coming year is for gathering the consent of the competent institutions in the countries involved and completing the national steps required. In Italy these include the inventory process for agri-food heritage at the Italian Ministry of Agriculture. They are long, low-profile steps: that is the way the candidacy has to go.

What the Dogale brings

Venice holds a significant place in the history and the spread of stockfish culture. The Confraternita takes part in the journey by safeguarding and promoting a preparation that belongs to the life of the city. It is made, it is offered, it is shared. Even a cicchetto, the small Venetian bar snack, can be a way into the gestures and the knowledge that keep this tradition alive.

A story of travel

The Via Querinissima, a Cultural Route of the Council of Europe, retraces the fifteenth century voyage of Pietro Querini and the connections that accompanied the spread of stockfish; the route is covered in our press review from May 2026 (in Italian). In 2032 that voyage turns six hundred years old. Between now and then the Dogale means to pass on something beyond the recipe: the knowledge, the gestures and the bonds between communities that have kept it alive for centuries.

The candidacy is under way. UNESCO recognition is the goal the project is working towards.
